I baked these scrumptious chocolate cupcakes for a bake sale to benefit Cupcakes for a Cure. Ok, even a mad cake baker knows its good to bake for a worthy cause.
Here is the ganache recipe I used to top the cupcakes:
227 grams dark semi-sweet chocolate
3/4 cup heavy whipping cream
28 grams unsalted butter
1 tab. cognac
Start by placing cream and butter in a saucepan. Bring mixture just to a boil over medium heat. Have the chocolate ready in a bowl and immediately pour hot cream over the chocolate. Fold mixture with a rubber spatula and let set for a few minutes. Stir with a whisk and add flavoring. Yummy!
